Ingredients

  • 60 g medjool dates — pitted and roughly chopped
  • 40 g pumpkin seeds — raw, unsalted
  • 40 g sunflower seeds — raw, unsalted
  • 25 g desiccated coconut — unsweetened, plus extra for rolling
  • 8 g cocoa powder — unsweetened
  • 10 g coconut oil — melted but cooled
  • 1 g salt — fine optional

Instructions

  1. Add the pumpkin seeds and sunflower seeds to a food processor and pulse until they form a coarse meal, stopping before they turn into a paste.
  2. Add the chopped dates, desiccated coconut, cocoa powder, salt (if using), and melted coconut oil to the processor and blend until the mixture starts to clump together when pressed between your fingers.
  3. If the mixture feels too dry and crumbly, add 1–2 teaspoons of water, pulsing briefly until it just holds together; avoid over-processing to keep some texture.
  4. Scoop out small portions (about 15 g each) and roll between your palms to form 10 bite-sized balls, then gently roll each ball in a little extra desiccated coconut if desired.
  5. Place the bites on a plate or tray and chill in the fridge for at least 10–15 minutes to firm up before eating.
