Fatigue Breakfast
Creamy Mushroom, Spinach & Ricotta Omelette
High-protein breakfast for GLP-1 fatigue, built around eggs, light ricotta and mushrooms — sized for a smaller appetite.
Ingredients
- 3 piece eggs
- 40 g light ricotta
- 80 g mushrooms — sliced
- 40 g baby spinach
- 1 tsp olive oil
- 1 tbsp grated parmesan
- 1 pinch Black pepper — to taste optional
Instructions
- Heat olive oil in a non-stick pan.
- Cook mushrooms for 4–5 minutes.
- Add spinach until wilted.
- Whisk eggs.
- Pour eggs into the pan.
- Cook gently over medium-low heat.
- Dollop ricotta over one half.
- Sprinkle parmesan.
- Fold omelette and cook another minute.
- Garnish with parsley.
- Serve with: One slice toasted sourdough.
