Fatigue Breakfast
Fluffy Banana & Cinnamon Protein Pancakes
High-protein breakfast for GLP-1 fatigue, built around medium ripe banana, large eggs and reduced-fat cottage cheese — sized for a smaller appetite.
Ingredients
- 120 g medium ripe banana
- 2 piece large eggs
- 100 g reduced-fat cottage cheese
- 40 g rolled oats — blended into oat flour
- 25 g vanilla whey protein isolate
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 0.5 tsp vanilla extract
- 1 tsp olive oil (for cooking)
- 100 g reduced-fat Greek yoghurt
- 75 g fresh blueberries
- 1 tbsp chopped walnuts
- 1 tsp maple syrup optional
Instructions
- Blend the banana, eggs, cottage cheese, oats, protein powder, baking powder, cinnamon and vanilla until smooth.
- Heat a non-stick pan over medium-low heat and lightly grease with olive oil.
- Pour about ¼ cup of batter per pancake.
- Cook for 2–3 minutes until bubbles appear, then flip and cook for another 2 minutes.
- Stack the pancakes and top with yoghurt, blueberries and walnuts.
