Ingredients

  • 120 g medium ripe banana
  • 2 piece large eggs
  • 100 g reduced-fat cottage cheese
  • 40 g rolled oats — blended into oat flour
  • 25 g vanilla whey protein isolate
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 0.5 tsp vanilla extract
  • 1 tsp olive oil (for cooking)
  • 100 g reduced-fat Greek yoghurt
  • 75 g fresh blueberries
  • 1 tbsp chopped walnuts
  • 1 tsp maple syrup optional

Instructions

  1. Blend the banana, eggs, cottage cheese, oats, protein powder, baking powder, cinnamon and vanilla until smooth.
  2. Heat a non-stick pan over medium-low heat and lightly grease with olive oil.
  3. Pour about ¼ cup of batter per pancake.
  4. Cook for 2–3 minutes until bubbles appear, then flip and cook for another 2 minutes.
  5. Stack the pancakes and top with yoghurt, blueberries and walnuts.
