Savoury Pumpkin & Feta Baked Oats
Savoury Pumpkin & Feta Baked Oats is a dietician-designed breakfast built around rolled oats, eggs and cottage cheese. It's made for GLP-1 medication users managing reflux, with protein kept high and portions sized for a smaller appetite.
Ingredients
- 1 cup rolled oats
- 2 piece eggs
- 150 g cottage cheese
- 0.5 cup pumpkin purée
- 100 ml reduced-fat milk
- 50 g reduced-fat feta
- 1 tbsp grated parmesan
- 1 tsp thyme
- 0.5 tsp smoked paprika
- 40 g baby spinach
- 1 pinch Black pepper — to taste optional
Instructions
- Preheat oven to 180°C.
- Mix oats, eggs, cottage cheese, milk and pumpkin.
- Stir through spinach, herbs and spices.
- Fold in feta.
- Pour into a greased baking dish.
- Sprinkle parmesan.
- Bake 30 minutes until golden.
- Rest 10 minutes before slicing.
- Keeps beautifully for breakfast meal prep.
