Sheet-Pan Ginger Chicken, Potatoes & Greens
Sheet-Pan Ginger Chicken, Potatoes & Greens is a one-tray family dinner built around roasted chicken thighs, baby potatoes and green beans. It's designed for GLP-1 medication users managing low appetite, with protein-dense chicken and small, appealing portions that scale easily for the rest of the family.
Ingredients
- 300 g boneless skinless chicken thighs — trimmed
- 300 g baby potatoes — halved
- 100 g green beans — trimmed
- 15 ml olive oil
- 6 g garlic — minced
- 5 g fresh ginger — grated optional
- 15 ml lemon juice optional
- 2 g dried italian herb mix optional
- 2 g salt optional
Instructions
- Preheat the oven to 220°C/425°F (use 190°C/375°F if you're sensitive to roasting smells).
- Toss the chicken thighs and halved potatoes with olive oil, garlic, ginger, herbs and a little salt on a lined sheet pan.
- Roast for 20 minutes, then add the green beans to the tray, tossed with a little of the pan juices.
- Return to the oven for a further 12-15 minutes, until the chicken is cooked through and the potatoes are tender.
- Finish with a squeeze of lemon juice over the tray before serving.
Tips for GLP-1 users
Smell-sensitive: steam the green beans separately instead of roasting them on the tray, and roast at the lower 190°C/375°F temperature.
Family scale: double every base quantity (600g chicken thighs, 600g potatoes, 200g green beans) for four adult servings. Kids' portions can be served deconstructed straight off the tray — no extra family-only ingredients are needed.
