Soft Beef Tacos
Soft Beef Tacos repurpose Night 4's leftover beef mince into warm, soft tortillas with the same cool toppings, gently reheated rather than cooked from scratch. It's designed for GLP-1 medication users managing fatigue, with small portions and a soft texture that's easy to prepare and eat.
Ingredients
- 250 g cooked lean beef mince — leftover from Night 4, warmed gently
- 4 piece soft flour tortillas — warmed in a dry pan
- 100 g avocado — diced
- 60 g plain yogurt
- 80 g tomato — diced
- 40 g lettuce — shredded
- 40 g cheddar cheese — grated
- 10 ml lime juice optional
Instructions
- Warm the leftover beef mince gently in a pan until heated through.
- Warm the soft tortillas in a dry pan, a few seconds per side.
- Fill each tortilla with warm beef, diced avocado, plain yogurt, diced tomato, shredded lettuce and grated cheddar.
- Finish with a squeeze of lime juice if using.
- Serve in small, soft-filled tortillas rather than crunchy shells.
