Warm Chicken & Rice Bowls
Warm Chicken & Rice Bowls repurpose Night 1's leftover roasted chicken into a gentle, warming bowl with basmati rice, carrot, spinach and a mild yogurt-lemon dressing. It's designed for GLP-1 medication users managing fatigue, with steady carbohydrates and moist, easy-to-eat protein.
Ingredients
- 200 g roasted chicken thigh — shredded, leftover from Night 1
- 150 g basmati rice — dry, rinsed
- 60 g carrot — grated
- 50 g baby spinach
- 60 g plain yogurt
- 15 ml lemon juice
- 100 ml chicken broth — warmed optional
- 20 g cheddar cheese — grated, optional kid topping optional
- 1 g salt optional
Instructions
- Cook the basmati rice according to packet directions.
- Warm the leftover shredded chicken gently with a splash of chicken broth to moisten it and slice it thin.
- Stir the plain yogurt and lemon juice together to make a mild dressing.
- Build each bowl with rice, warmed chicken, grated carrot and baby spinach, finished with the yogurt-lemon dressing.
- For a kid-build-your-own version, set out extra shredded carrot and grated cheddar as a topping bar.
Tips for GLP-1 users
Fatigue-friendly: the warm broth splash keeps the chicken moist and easy to chew, and slicing it thin makes it less tiring to eat.
Family scale: double every base quantity (400g chicken, 300g rice) for four adult servings, plus the optional topping bar for kid-build-your-own bowls — no other family-only ingredients are needed.
