Blueberry Almond Baked Protein Oatmeal

Ingredients

  • 2 cups rolled oats
  • 60 g vanilla protein powder
  • 2 piece eggs
  • 350 ml reduced-fat milk
  • 200 g reduced-fat Greek yoghurt
  • 150 g fresh or frozen blueberries
  • 2 tbsp chia seeds
  • 1 tbsp ground flaxseed
  • 40 g flaked almonds
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Instructions

  1. Preheat oven to 180°C.
  2. Combine oats, protein powder, baking powder, cinnamon, chia and flaxseed.
  3. Whisk eggs, milk, yoghurt and vanilla together.
  4. Fold the wet ingredients into the dry mixture.
  5. Gently stir through the blueberries.
  6. Pour into a lined baking dish.
  7. Sprinkle with flaked almonds.
  8. Bake for 35–40 minutes until golden.
  9. Cool for 10 minutes before slicing into six portions.
