Ingredients

  • 160 g white fish fillet — cut into small pieces
  • 80 g white sandwich bread — crusts removed, torn into small pieces
  • 20 g unflavoured or vanilla-free whey protein powder — dry
  • 80 ml low-fat lactose-free milk — room temperature
  • 1 g ground cinnamon — ground
  • 1 pinch salt — fine optional
  • 5 ml olive oil — for greasing

Instructions

  1. Preheat the oven to 180°C and lightly grease a small baking dish or tray with the olive oil.
  2. In a bowl, combine the milk and protein powder, whisking until smooth with no dry lumps.
  3. Add the torn white bread to the bowl and gently press so it soaks up the liquid, resting for 2–3 minutes until very soft.
  4. Stir in the cinnamon and optional salt, then fold in the small pieces of white fish, mixing gently so the fish is evenly distributed but not broken down completely.
  5. Spoon the mixture into 6–8 small mounds or mini patties on the greased tray, shaping them into bite-sized pieces.
  6. Bake for 10–12 minutes until the fish is just cooked through and the bites are set but still soft, avoiding browning too much to keep them gentle on the stomach.
  7. Allow to cool slightly before serving warm; serve plain without strong sauces to keep the snack soothing and easy to digest.
