Creamy Pumpkin Pie Protein Oats

Ingredients

  • 50 g rolled oats
  • 250 ml reduced-fat milk
  • 80 g canned pumpkin purée (100% pumpkin)
  • 25 g vanilla whey protein isolate
  • 1 tbsp ground flaxseed
  • 0.5 tsp cinnamon
  • 0.25 tsp ground ginger
  • 1 tbsp chopped pecans
  • 1 tsp maple syrup optional

Instructions

  1. Add oats, milk and pumpkin purée to a saucepan.
  2. Simmer over medium heat for 5–6 minutes, stirring regularly.
  3. Remove from heat and allow to cool for 1 minute.
  4. Stir in protein powder until smooth.
  5. Mix through the flaxseed.
  6. Spoon into a bowl and top with pecans, cinnamon and maple syrup if using.

Tips for GLP-1 users

Variation: Make it overnight by mixing all ingredients (except pecans) and refrigerating overnight.
