Caprese Cottage Cheese Bowl
High-protein snack for GLP-1 fatigue, built around light cottage cheese, cherry tomatoes and fresh basil leaves — sized for a smaller appetite.
Ingredients
- 175 g light cottage cheese
- 100 g cherry tomatoes — halved (omit if tomatoes worsen reflux)
- 9 piece fresh basil leaves — torn
- 1 tsp extra virgin olive oil
- 1 tsp balsamic glaze optional
- 0.5 tsp dried oregano
- 1 pinch Freshly cracked black pepper — to taste optional
- 2 piece wholegrain crispbreads optional
Instructions
- Spoon the cottage cheese into a serving bowl.
- Arrange the cherry tomatoes over the top.
- Scatter over the basil leaves.
- Drizzle with olive oil and balsamic glaze if using.
- Sprinkle with oregano and cracked black pepper.
- Serve immediately with crispbreads if desired.
