Watermelon-Mint Protein Slush
This refreshing, sip-able dinner slush is designed for GLP-1 users with low appetite, packing high-quality, easy-to-drink plant protein into a small, hydrating portion. The light watermelon-mint flavor and smooth texture make it easier to tolerate when you don’t feel like chewing or facing a heavy meal.
Ingredients
- 250 g frozen watermelon — cubed
- 160 g firm tofu — cubed, chilled
- 80 g cooked red lentils — well-rinsed and cooled
- 200 ml unsweetened coconut water — chilled
- 6 g fresh mint leaves — loosely packed
- 4 g fresh ginger — peeled and sliced optional
- 10 g maple syrup — liquid optional
Instructions
- Add the chilled coconut water to a high-speed blender, followed by the firm tofu and cooked, well-rinsed red lentils.
- Blend on high until completely smooth and creamy, scraping down the sides as needed to remove any visible lentil or tofu pieces.
- Add the frozen watermelon cubes, fresh mint leaves, and optional fresh ginger and maple syrup to the blender.
- Blend again on high until you achieve a thick, uniform slush consistency with no chunks of fruit or legumes remaining.
- Taste and adjust sweetness or mint intensity if needed, adding a splash more coconut water if the mixture is too thick to sip comfortably.
- Divide the slush into two small glasses or bowls and serve immediately while very cold, sipping slowly to gauge fullness.
Tips for GLP-1 users
If your appetite is very low, start with half a portion and sip slowly; this recipe concentrates plant protein and hydration into a small volume that’s easier to tolerate on GLP-1 medications.
